Watering potted peach tree during winter

I am growing a bonanza peach (dwarf) in a container in Phoenix. This is my first time tending a deciduous tree. I know it should be entering dormancy within the next month or so. I'm wondering about watering frequency. The tree is in a fast draining 5-1-1) mix. Do I water it as I normally would (when the first inch or two of mix is dry), or do I need to do something different to maintain the dormancy? Most of what I've read has to do with in-ground trees and they say to really ease off the watering in winter. But I assume dry roots are no good regardless of season, and a fast draining mix won't retain moisture like the ground.
