Lighting and hardware question for kitchen remodel

We are in the midst of a kitchen remodel and need to pick out the remaining lighting and the hardware. I have some general questions about what the "rules" are when mixing finishes.

We have stainless appliances. Our cabinets are a darker warm brown, floor is unstained red oak, countertop will be a light colored granite. Style is fairly traditional. We have these light fixtures over the island and the corner sink. Should I try to replicate this style and color of light over the adjoining kitchen table? or how much variation can there be. Can I use something with a clear globe instead of white? Pictures would really be helpful.

For cabinet hardware, should I go with a nickel or ORB color since I already have those colors in the kitchen? Current pantry door knobs are ORB. The rest of the house does have some brass since it was built in the 1980's and most handles and light fixtures (about 80%) have not been replaced.

Thank you!
