Kitchen backsplash dilemma - no cabinets over part of countertop

I'm putting in a blue-gray subway tile backsplash from the countertop to the bottom of the cabinets and hood, but one portion over the countertop has no cabinets (excuse the mess):

I'm extending the tile line as shown with the blue dotted line (obviously not over the window), but I don't know how to finish the edges! Bullnose tile around the edges? Some type of tile moulding/trim? But that would be the only portion with trim... Also, that microwave will not be there when the project is finished and that side of the counter will have fridge next to it.

And to make matters more complicated, I have this sort of island, but it's connected to a wall. I think tiles on this wall would look odd and random, but I don't want to do a 4" quartz strip b/c I think it will clash with the tile backsplash. Can I just leave this wall bare? (The grocery bag is blocking the sink, which is not near the wall).

I've scoured the internet for photos but can't see examples close to my situation. Help!
