Range BTU to CFM Range Hood

Hello,

We are building and currently trying to determine the appliances we will put in our kitchen. We have setup for a vented range hood to be installed but we did not setup for makeup air system. The 36" ranges we have been looking at has around 75-80k worth of BTUs from the gas burners which on the surface seems like will be too much for a 400 CFM range hood. However, we rarely plan to be cooking with all burners let alone all burners set to the max BTU output. I continuously read that for every 10,000 BTUs you should have 100 CFM but does this actually apply if you are not fully using all of your burners and at max output?

If we only use 40k of a 75k range output would a 400 CFM range hood not suffice for what is required?
