Turning recessed nook into reach in pantry

Advice please! We are buying a house with limited (beautiful) cabinets space and a 20” depth recessed nook (135” long and 84” high). (Wall with the white hutch in photos below. I’m going to take out the existing pantry closet and extend cabinets and counter along that wall.)

I want to use 3/4 of it as a reach in pantry and the rest as a built in desk area with floating shelves above. right now the nook doesnt reach the ceiling and I’m wondering if anyone has ideas for how to put doors on with minimal build-out or if I’m kind of stuck doing a cabinet wall. second question, the existing cabinets are a beautiful natural maple shaker. Any suggestions for complementary but not matching colors/cabinets/style?
