Do you and DH both work outside the home? Or do you anticipate selling your home to a dual career couple? Anyone who has ever struggled to get up, dressed and out before 7 or 8 am -- and there's another person on the same schedule -- must have dual sinks. In that case I'd find two toilets more useful than two sinks... We put two sinks in our 84" vanity, but in 60" I'd probably put just one, for counterspace. Dh is neater than I am and it wouldn't bother us to share.

I know I wouldn't be happy with trash, etc across from my sink. We have curbside recycling and compost. So I need to rinse a lot of things before they get chucked in the recycle bin. And I'm really looking forward to a better arrangement to increase my composting. But maybe you don't have recycling so you aren't rinsing things? And maybe you use the garbage disposal for vegetable scraps and such? I think it might depend some on your kitchen habits. I'm getting the stages 45 and I am going with two faucets. The ability to have people wash their hands or get a drink without disrupting my work is a major motivator for me in choosing this sink. Two karbons was out of budget for me. So I'm going with two less expensive pull out faucets.

Cedar, I don't think you will be able to center the entry door, the entry will need to be a bit closer to the north wall. Interior of shower needs to be at least 30" x 30." Doorway opening needs to be at least 32" wide, regardless of whether this is a pivot door, barn door, or pocket door. Check your local code. Will this be your only linen closet? I would extend the vanity across the north wall with two sinks and add upper storage in one central tower. A narrow, tall cabinet on one side with a 72" vanity can work, but asymmetry in a small room can make it look even smaller. A 60" vanity gives very little counter space with 2 normal-size basins (18" x 12"). Code requires that centerline of sink be at least 15" from side wall, to avoid bumping elbows against walls. With 18" sinks, a 60" vanity would leave only 6" of counter space on each side and 12" in the center. My second choiceI would be a 48" vanity with one sink and a big storage cabinet. That sacrifices the second sink, but offers lots of storage and counter space. In the sketches below, I'm using a 30 x 50" shower and a 24" deep vanity. 1st design is 72" vanity and 2nd design is 86" vanity.

Our plumbing cost was $420 to change from two sinks to one. An additional sink, faucet, and sink cutout by the fabricator would have been at least that if we had replaced our original two-sink vanity with the same setup. The offset single sink option is cheaper as you'd only have to cap off the second drain and water. You could do a double light over the sink and the counter so there'd be no need to change your electrical boxes.
