Comments (13)Yep, I am, was diagnosed the same as your hubby 6 or 7 years ago and controlled it by diet but it progressed and I am now diabetic. The first thing I did was eliminate everything white from my diet except for cauliflower. Then I enrolled in a 3 week class offered by our local hospital, met with a nutrionist and learned how to manage the disease. If your husband is not seeing an endocronologist I encourage him to do so. Some physicians (not saying yours is one of them) just don't give this disease the respect it truly deserves. It is serious but is easily managed with knowledge. I slowly added various foods into my diet, things like spaghetti, breads, potatoes, even cakes and desserts. But I learned how to manage them, what to combine with them to keep my sugar levels where they need to be or what to do to counteract them (the answer is exercise). So that candy bar has a price....30 minutes on the treadmill! Citrus is one of the safest fruits for me. When I was trying to figure out what I could eat I ate it then checked my sugar levels in 90 minutes, again 30 minutes later. If it was too high then I had my answer, eat in moderation. Comments (27)ideefix, I am right there with you. That said, there is no dissuading them. They are older parents who are set in doing what they want to do. All I would do is offend them and I do love these very loving people. I live in the heart of the country where very strange names aren't that uncommon. We have lots of people with Dreadlocks and see names like 'River, Yuba, Canyon, Sierra or Tahoe'. (I can't even remember the *really* odd names I've heard!) In my experience, these kids often change their names when they hit their teens. I've seen it time and again. I know one 'Tahoe' who changed his name to 'Wyatt', his middle name. Then again, my oldest sister's daughter named her girls 'Rocca and Yarrow'. I could see 'Yarrah' perhaps, but it appears they have an 'O' fetish. Comments (10)Also, red or yukon gold or sweet potatoes over white. Sweet have the same carbs as white, but the carbs are absorbed slower so it helps keep the sugar spikes down. Brown over white rice. For me, white rice, pasta, and potatoes are my spikes. I eat them, but try to limit them. I controlled mine by diet for about 18 months before I asked to be put on meds. I still eat what I want, when I want, but smaller portions if I know it's something that will spike mine. Each person has their own triggers. You can not go strictly by the book. I can eat ice cream, not sugar free, and not have much more of an increase than if I ate a big bowl of fruit, but much less of an increase than if I had rice or pasta. It's common sense and knowing what your system digests the best. You are giving a wonderful gift. Just cook as healthily as you always do, and you will do just fine. So many non-diabetics panic when they have to cook for us, but you don't need to. You already know how. And all these sugar substitues are not good for anyone. Of course naturally occuring sugars are better than cane/beet sugar, but a little isn't a big deal. If we sit down with a piece of cake piled high in icing, yes we'll have a problem, but it's OUR problem, and we don't have to eat it. Comments (29)That's a great compromise. They don't feel pushed. You get to make sure they're fed properly. They'll get to assess their further needs when they come, assuming they're both rested enough at some point to notice. :) Re freezing, I learned a new trick this year. Instead of flat packs of soup, I made pucks. I don't think they take more room in the freezer. The advantage is you can just plunk a puck into a bowl and zap it. I did soup, chili, and something else I can't remember. The molds I have are 7 oz. Silicone so it's easy to peel out the frozen pucks and bag them. The molds fit on quarter sheet pans, which makes them easy to manage, carrying and setting in the freezer, topped with plastic wrap. The same thing would work great for baby food with appropriate sized pucks, which could be plonked into babyfood containers in the fridge to thaw, or zapped in a dish.
