Lemon-Creme Fraiche "Ice cream sandwiches"

I forget who hear turned me on to this recipe (link below), but I've made it several times, including versions with berry jam and mini chocolate chips, pumpkin and crushed toffee, fig butter and hazelnut, etc.

My one issue with the original recipe is that they are large; i find guests usually prefer smaller dessert portions (even if they end up eating 2 anyway, LOL).

So I decided to experiment using a similar, triangular cookies (these cookies are fab by themselves btw, with a taste kind of like a flaky gourmet sugar cone). I did a test today and they came out fine.

I am going to serve them on the side w a fruit salad of stone fruits and blackberries.
