You don't have much counter working space you need to make it bigger or get-rid of something to give more counter space... 21-24" is nothing

even with 3 separate areas of around 2 feet? thats what I was worried about

Yes, even with 3 separate spaces, you want a good amount of counter working space on each side of the appliance min 36"... just open your ruler to 24" and you will see that is nothing and the last thing you want is trying to prep or keep something in the cramped up space a few inches from the hot grill.

I agree that you need more useful counter space. When we designed our outdoor kitchens for our yard, I wanted to cram tons of stuff in, but I ended up going for more counter space. Sure all that stuff seems cool, but how much will I actually use it. In my build, I gave up the griddle. in reality, we really only use our egg. In fact, we got a second egg that we wheel out for large events.

Yeah I know Ill use the egg a lot. I also made some of my cutouts 1-2" more than it says on website so there is probably about 6" extra space there and I am actually thinking that I don't need a 36" grill and probably will be doing a 30"

What would the minimum space between the griddle and grill that y'all recommend? With the smaller grill size I can get my two 24" counter spaces closer to 30" each.

I dont actually do a ton of prepping outside. mostly will have raw ingredients ready to go on or a fourth sheet pan or 2 to bring a boston butt out on or foil it during a cook etc.

i can see myself having maybe a platter of mise en place'ed ingredients for a wok cook or fried rice on griddle etc.
