Side and Backsplash for powder room bathroom vanity dilemma

I would love any opinions or ideas what I can/should do for the Side and Backsplash in my powder room bathroom vanity.

I didn't want splashes at all but due to time constraints and I was up against my husband contractor and granite installer that all insisted I must have them. I was told they would make them thinner but they were installed at 1 1/4" thick. They removed them to cut them to 3/4" thickness. (I like the look without it but due to the gap from the granite on the right side I don't have that option).

Now bc the backsplash will be thinner the side splash will be pushed back and not meet the counter depth. Should I have the right side come up to the door molding and have the left side match that?

What would you do????
