Need help with mowing vs. letting grass seed germinate

Hello! After years of having a lawn service, we tackled our lawns ourselves this year - 1/2 acre, southern Ontario. Lawn severely damaged by grubs, poor mowing etc in the past - approx 70% was beige dead grass we could pull out with our hands.

Two weeks ago we aerated, top-dressed and grass-seeded (it was a great learning experience and actually fun - definitely will keep doing it ourselves going forward). Lawn wasn't long enough to mow at the time and not much grass was present.

We had a bit of snow, lots of frost so germination didn't start until late last week.

Challenge now is the lawn is LONG but the new seedlings and baby grasses are really tiny and I know they will get damaged if we mow.

My question is - can we let the grass grow another week to give these little guys a fighting chance of taking root and follow very precise mowing (can even mow a tiny bit every few days) ? Part of our lawn damage was that our old service would just mow and leave long clippings on a schedule vs. doing it correctly (lots of research has taught us how to mow going forward)
