help with bathroom vanity lighting suggestions

We have reno'd the ensuite bathroom-- warm greys, beige, tan, white color scheme and have come to a grinding halt. We've been looking for ages to find the right light to go over the mirrors, but struggling because we centred the outlet to the sink vs. centred to the cabinet base/mirror. Originally I was thinking a double light, but wondering if that would look too squishy so now thinking a single? The space from the wall to top of crown is 32" wide (see photo). Edge of the electrical box to crown edge is 8". Mirror measures 27.25" wide (frame to frame)

There are pot lights in the ceiling so there is other lighting, and so far not bad for doing my makeup. It's a double vanity (split by the tower) so we need 2 lights. Our preferred look is classic, not too fussy so any suggestions would be welcome.
