Comments (192)Well Mo, sgmkj22 et al... we're observing same phenomenon, which seems to have no viable solution other than "staying on top" of the streaks. Which means every day I suppose. But it sure is bizarre that none of us can make real sense of where/how it comes from. For example the vent idea makes sense, however these evaporation vents are in different places on the appliances - yet some of us get the streaks from seemingly unrelated areas. ALSO I wonder if its mostly Bosch brand, or if its a general stainless steel door thing ? Maybe some of them have really thin/flimsy door panel which essentially translates "heat" from inside leaving ghost marks! All I KNOW is that I hate stainless steel appliances, never understood why they became so popular as to be ubiquitous -- and the ONLY reason I have this new dishwasher in SS is because my husband insisted it would "look better" than my old white one. HA ! I think I'll have HIM "stay on top" of the streaks. Thanks everyone for chiming in... We're hosed. That's it....See MoreStraddling induction hobs...
Comments (5)For spanning burners, download and read the cooktop manuals for any you are considering. Some allow it and some do not. Those that allow it are usually contemplating 10" x 20" (or larger) pancake griddles rather than large round pots. I think that LG has an induction cooktop with a bridge-able pair of burners that might allow you to run a 12" pot. Maybe herring_maven can give some insight on this as I think he has an LG induction cooktop. For the other induction cooktops that allow burner spanning, there is a basic rule of thumb --- and please note that I said rule of thumb and not a guarantee --- that you need at least 60% coverage of each of the burners to get each one to work. My recollection from stove shopping last year is that most smaller induction burners are spaced too widely for you to achive that with a stockpot. If you are looking at 12" stockpots, this is probably academic because we usually don't care if the heat is perfect even across the bottom. (Think about the vast numbers of us who have used 12" and 14" canning kettles on 8" coil burners.) For stir frying, it would be problemmatic with induction for the same reason that it would be problemmatic with coil burners: the heat will tend to concentrate directly over the burners. You are correct to focus on the bottom of th pan. . Not everybody understands that, when you want a pan that is no more than 1" larger in diameter than the induction burner, we are talking about the bottom of the pan, not the 12" measurement across the top which is how fry pans are measured. You apparently have figured out that a 12" measurement is across the top but induction only "cares" about the base and the bases of most 12" fry pans are actually around 9" in diameter, not 12". As for using an induction disk with a 12" scanpan on an induction burner, that works as well putting the scanpan on a radiant electric burner. In fact, that is basically what you are doing with the induction disk: the disk effectively converts the induction burner into a radiant electric burner. There have been a couple of threads here and at chowhoun on induction disks within the last couple of years if you want to search for them. Also, Cooks Illustrated did a comparison test a year or so ago. Basically, they liked the Max Burton version but didn't think much of the other two they tried. I think IKEA sells one for something like $50 as does Secura. Or spend half that on an old-fashioned coil-burner hot plate. IMO, you consider a Duxtop (or better) PIC for broader cooking chores during your remodel period and because you might still find it useful after the remodel is done. As you might if, say, your remodel doesn't include an induction stove or cooktop with timer-controlled burners or if you do enough production cooking that an extra burner will come in handy. I also agree with what Kazmom said about multi-cookers. I do think there is much to be said for the Breville and Instant Pot units as pressure cookers and much to be said about why you might or might not care about slow-cooking abilities when speedy pressure cooking modes often accomplish the same things in a small fraction of the time. Indeed, I have been known to say this at eye-glazing length, too. :>) These days I just refer folks to this article on the Serious Eats site which covers the subject lucidly and well. FWIW, I've recommended Instant Pots and Brevilles to friends (who all like them a lot) but I do not have one myself. I already had several stove-top pressure cookers before Instant Pot opened up the market for countertop units, and I have a timer-controlled induction cooktop which gives me as much fire-and-forget pressure cooking as I want. While this suits my own cooking style and preferences, this is also very much a matter of personal preferences, so your YMMV....See Moredelray33483
