Will a light gray clash/look strange with the warm tones of the cabinets and floors? I feel like the only other option is white, which I really do not want to do. Gray is not a problem in and of itself, but the one you have chosen has cool undertones that may not be flattering to your warm woods. White is not the only other option. A warmer gray can absolutely work. Below is Owl Gray; its green undertones could make your floors look orange. Compare that to the greige below, a warm grey beige from Farrow and Ball that makes your floors look mercifully brown. These hues are not that different, but their effect on your space is huge. For backsplash we are looking at marble tiles of some sort (either brick pattern or herringbone). If you can wait to pick a bs that will give you the option to see sample tiles in your space with your materials in your light. That said, nothing makes faux marble counters look faux-er than a real marble bs. In the image below, the bs looks like the real thing (because it is) and the counters look like plastic. It's also a lot of "stone" look in one place. That said, people do it all the time. Google your counter and maple cabinets and save images of kitchens that you like. It may help you find a look you love.

If you are asking whether it's a good idea to replace hardwood floors in the living area with tile: my vote is no. I am not sure where your house is, but in most of the American climatic zones, tile in the living space is weird. It is appropriate in the tropics or the Caribbean, but not the U.S. Here is appears low-rent or just odd. To give you an example, in my area there is a top-budget luxury builder who puts up multi-million dollar mansions. He's from Iran originally and it clearly shows in his choice of finishes - like marble floors in expansive public areas of the house. All I can think when I see this is that marble floors must feel cool and restful in Tehran but here in Washington D.C. they are just cold, slippery and uninviting. Re: chevron - I think this is something that may really date your house to a particular period. The fashion for chevron is bound to be short-lived.

@SJ McCarthy Everyone has been super helpful and either the brick is a look you like or you don't which I get but no one has mentioned the brick against the wood laminate except you. The washed grayish brown brick looks completely fine against my existing wood laminate - I included a picture with my floor and the brick tiles and there is nothing wrong with it. The reddish brown brick suggested here is also a washed looked and something I am considering. Both the brick I selected and the tone that was suggested are warm. You say that I am trying to add a very warm floor to cool tones, but how is that wrong? You can mix gray/white cool tones in the same room as warm tones so I am not following where you say that is an issue. I see it all over Pinterest and HGTV with gray walls and orangish brown wood floors and the same toned wood in bamboo shades and baskets so..... And yes, I am saying I want a floor to add warmth due to all the cool tones. Most people select wood floors to add the warm element. I am in a situation where I can't add wood floors so I need another option. I have looked at silver travertine, brown travertine and everything in the middle. I've been to 4 flooring stores. I do not like the look of travertine because I see too much orange in the options that would go with my color scheme. I appreciate your suggestion but I spent $4,000 on the laminate I have throughout my downstairs 3 years ago. It's not going anywhere anytime soon.

I find it interesting when people say gray is out. They never seem to show what they have in their own space that would be better. All one has to do is google new built multimillion dollar in the NYC suburbs. Hard pressed to find a kitchen that not gray and white. But...I digress. I agree with Patricia. I like gray and have it in my newly renovated Florida home. If you like gray, use it. That said, I wouldn't use gray wood look next to really hardwood. There are so many tiles to choose from. I love a large format gray herringbone.
