Comments (24)Had some boneless thighs I had to cook up. I seared them off on both sides and put in a baking dish. Added some butter to the pan and sauteed a tub of mushrooms and bag of fresh spinach. Spooned all that over the chicken thighs. Sprinkled Parmesan cheese over everything and poured a small carton of whipping cream over the top. Baked at 350 for about 30 minutes. Came out very good! Made another Potluck German Apple Cake for husband. He loves that cake! Roasting a couple of turkey breasts for sandwiches and a pot of turkey noodle soup later in the week. Comments (22)I am doing a small father's day brunch that just got a little smaller. My FIL fell and has a compressed fracture of the spine. They think he'll be okay, but is in some discomfort and won't be released from hospital for a bit. I'm serving roasted veggie and cheese sandwiches on homemade foccacia and Ina's roasted shrimp salad (to which I plan on adding roasted corn and avocado). hhireno, I have one DD who is a vegetarian and one who was a very fussy eater (thankfully she's outgrown it). I never expect our hosts to cook special for them and always bring something instead. However, I have never been asked to bring things for them and, as a host, I wouldn't dream of asking someone to bring their own (but would accept if they offered - esp. with allergies or vegans 'cause I'm so scared I'll get it wrong)....See MoreAre You Baking or Cooking Something For The Weekend?

Comments (5)I'm sorry about your friend, Marilyn Sue. That is a lot of meatloaf you will be making. We have a small chest freezer that needs defrosting so we are not buying any meat until we eat what is in there. Plus, I don't want to leave a freezer full of food when we will be gone for a month in Dec/January. So, I'll be cooking something out of the freezer but not sure what just yet.
