Why do I need a cover for WS?

Sorry if this is a question that has been asked before. But I was talking about trying winter sowing again this year with a friend of mine. And they asked what that was.

So I explained using jugs or containers that you put holes in and put outside in the winter so they sprout when they are ready in the spring.

And then they asked me... Well, if they are seeds that are supposed to be outside in the winter, why do you need a cover on your containers? Aren't they seeds that want to grow on the ground like that anyway?

I had no idea what the answer was. I just do it because it's the way I always see it done. I thought maybe because your seeds might pop a little sooner covered? I figured someone here would know a better answer than I.
