Comments (5)You said you want to do a lot of appetizers. I agree with gellchom though, that you should stay away from a menu of lots of different fancy appetizers. Doing simple appetizers which can be made ahead is the way to go. Make a lot and store extras in the fridge (or on warm in the oven or on the stove as appropriate) so that they can be easily replenished. So, the veggie, fruit and cheese trays are perfect. Just make sure to have extras of each on hand for when they run low. Same with deviled eggs & shrimp. In order to make the appetizers more hearty I'd have two warm meat items. Meatballs in a sauce is very easy, and you can either make the meatballs in advance yourself or buy them frozen. A simple delicious sauce I can recommend is a mixture of ketchup & beer. I've served that a few times and it's a big hit. You can do chicken skewers with spicy peanut sauce. Or little smoky sausages in BBQ sauce. Etc. Make everything ahead of time. Use a chafing dish or warming tray or crock pot to keep the warm things warm. Don't serve anything that has to be eaten hot right out of the oven. Serve things that can be easily stored while waiting to be put out. Don't serve too many different things. Some other simple things to put out are a couple of dips with chips. Serve crackers with the cheese. Small rolls or some kind of bread will also help fill people up. Remember that the point of the party is to enjoy your guests and show off your house. Comments (11)I always think charoset tastes better for having some time for the flavor to blend. I usually make it a day or two in advance to allow for that. Hard boiled eggs and the roasted egg for the seder plate can be made ahead. I haven't made charloette or carrot souffle before so I can't speak to those. The chicken in a sauce should reheat fine. Soup and matazh balls can be made ahead but depending on quantity may strain fridge room - at least they would for me at the beginning of Pesach. I haven't made matzah balls from a mix, but the recipe I use has the matzah ball mixture being refrigerated for 30 minutes before forming the balls and dropping them in the soup - I think the mixture could be made up to that point and held a couple of days in the fridge. Matzah crunch and meringues can be made in advance but make sure to pack them away in something air tight especially if you are somewhere that may have humid weather. Comments (42)reporting back! Sorry that I didn't reply to the last few posts on this thread. The taco party happened and was a big success and martinca - it was a lot of work for us although our guests were all happy! We had about 25 people and about 120 tacos were eaten based on shell consumption. we ended up making a grilled chicken filling, barbacoa beef, and homemade chorizo/pork/potato filling. Plus refried beans and a rice and bean salad. We rented a buffet server to hold the meat and heated up shells at different points during the evening. The big tragedy of the night is that despite many fillings, we forgot the guacamole and the mango salsa (both homemade) in the fridge!!! Couldn't believe it the next day!!! We also did a layered dip for chips and forgot to put out the second batch of that. I think we got started on the blender drinks a little too early. funkyart - I made the stuffed jalapenos on a whim and just used what I had on hand. So I cut the jalapenos in half and scraped out the seeds, then made filling that was about 50% sour cream, 50% softened cream cheese, bunch of grated cheddar, some grated parmesan, some chili powder, lime juice, pepper, and crumbled turkey bacon. Then slathered into jalapeno halves, topped with more grated cheddar and grilled. They were very tasty!! Comments (9)I find that preformed sticky buns often take well more than 1 1/2 hours to come to room temp and begin to rise....and add another 30 minutes to bake and you are talking 2 hours. But...if you make the dough, and refrigerate the dough over night, you can shape the rolls more easily with cold dough, and the working, rolling etc, will hasten the warming, then put the pan into a closed space, like your microwave, with a 2 cup measure of very hot water and they will rise right up.....and you will have your rolls in about an hour and a half instead of 2 hours. Or do as I usually do, make a double batch the night before....wrap the pan in foil when it's hot out of the oven and reheat in a 300 oven in the morning....and eat the 2nd pan as it comes from the oven!...See Morenoodlesportland
