Sealing grout that "doesn't need sealing"?

Curious if you tile pros go ahead and seal grout that claims it doesn't need sealing? My wonderful, Old School GC is very eager to seal all our bathroom grout (possibly the tile as well?), despite my tile store insisting it doesn't need sealing. GC believes it should be sealed no matter what.

I'm all for a little extra insurance, but I'd also rather not have unnecessary chemicals (and expense) if possible. I think he favors Miracle Sealants 511. I was thinking of asking him to use AFM SafeCoat for a greener approach, though I expect a serious eye roll in response.

All the tile is rectified porcelain, except behind my son's vanity, so thin grout lines overall. Floor tile grout is Laticrete Platinum, shower wall grout is (yikes, senior moment!) and my son's vanity wall has Kiesel Middle Gray. Son's vanity wall is covered in SenecaStudio hand glazed tile. Seneca folks say this tile does not need to be sealed.
