I see. That makes sense. What are our options at this point? Also, should I have known this already and ordered the cabinet panel? I assumed the folks helping place our order would have walked us through things like this. Feeling sad about all the money we spent and having this outcome.

Can you fit a 1/4" back panel to match the cabinetry? Do you have a 1/4" - 1/2" to spare between the counter and cabinet?

Who were the folks that helped placed your order? Did they know your countertop material when the cabinet order was placed? Typically, a designer is the type of professional that knows all of the finishes and how they relate to each other.

Your least expensive solution is to paint it. It doesn't look like you have the space to add even a thin panel or skin.

Measure to see if you do have the space. If not then painting or an applique could work.

BEFORE you paint, I suggest you try it on a left over piece and leave it for a few days in case of bleaching into the surface etc.

Home Depot. Enough said. You’ll be very lucky if that’s the only issue. Especially with American Woodmark cabinets. Paint it and live with it.

A waterfall counter is difficult to get right. We see this time and again on this forum, now that waterfall counters are so mainstream. People expect the average fabricator to be able to install it, when previously it was only installed by the most skilled pros, in high-end kitchens. Whenever people come on here, when they are considering a waterfall counter but have not installed it yet, I always say they need to make sure their fabricator is top-notch, and has both the skills and experience to install a waterfall counter. Otherwise, they shouldn’t get one.

That is a pure hillbilly do-over. Nonnegotiable.
