Counter steamer or steam oven
Comments (4)The Gaggenau & Wolf countertop modules are all the same size, so replacement with the same or a different module should not be a big deal. We first considered doing modules to customize our "cooktop", and the steamer was the first one I considered. Then I discovered that Gaggenau also has the combi steam oven, which offers much larger capacity plus convection oven capability. The Gaggenau countertop steamer will drain, but the combi oven will both add steam or water and drain. We ended up choosing the combi steam oven instead of the countertop steamer. We did choose two other Gaggenau modules: the single induction burner & the teppanyaki griddle/grill. These flank a 36" AG range. I agree about the problem with a non-standard built-in appliance. Our former kitchen came with a Nutone unit that had the motor built in plus attachments for a blender, food processor, & mixer. None of them worked as well as a stand alone unit does, & we lived in fear that it would break before we could sell our house. It was also installed in a very inconvenient place. Of course it is possible to steam using all kinds of stovetop steamers, but they tie up burners, heat up the kitchen, or don't have the capacity of a steam oven. Been there, done that. Comments (7)A combi oven is much broader in function than a steam oven. . I would look at Miele, plumbed version. It functions as a steam oven but also as a full on convection oven but with control of humidity. You can read some of the manuals online especially Gaggenau and it gives you an idea of how it can work and the levels if humidity for different cooking needs. http://resources.gaggenau.com/us/wp-content/uploads/BS-470-485-Use-and-Care.pdf For just reheating, a MW is quicker. It is sort of self steaming. I think for some people , the combi oven is a great choice. I don’t have one because I don’t have room for a third oven and need the space of my 36” and 30” ovens. Comments (3)When you say "steam oven", I assume you mean the combination steam (CSO) models rather than pure steam ovens. The latter do exist, but they are a lot less versatile. Personally, I can't say enough good things about Miele's plumbed CSO. And since Wolf didn't have a plumbed model, it wasn't even in the running when we looked. I later read up on it, and the Wolf model seems less mature. Also, it is a third party product that Wolf buys and rebadges. So, that gives me less confidence. Having said that, combination steam ovens are some of the most complex appliances that you can own. Comments (8)Miele CSO’s and plumbed Gaggenau CSO’s have end of cooking cycle steam reduction features. The plumbed Gaggenau floods the compartment floor with cold water to condense steam. Plumbed and un-plumbed Miele draws the steam thru a condesner and out the the front at end of cooking cycle. The plumbed Gaggenau’s drain pump cannot really lift the drain water much and pretty much relies on gravity draining. The spec sheet says a drop of at least least 100mm (~3’) before going into the drain. It will be very tricky putting the code complaint plumbing for an under counter placement. The Miele’s drain pump can lift water vertically by approximately 500mm (~19’) which gives you some flexibility with the drain. However, the manaul does state ”The drainage siphon must not be located higher than the drain hose connection point on the steam oven. This is to ensure that water can drain out completely after a programme.”....See Moreshead
