Combi steam ovens: plumbed vs. water tank

I recently visited one of the larger appliance showrooms in our area. They sell all the most upscale brands and are well-respected. One of the salespeople, who has worked there for years, tried to dissuade me from buying a plumbed combi steam. He said that unless I use it literally everyday -- like, a restaurant would, no vacations from it -- I should get a water tank unit. He said, "Unless you want your food to taste like copper, you should get the water tank." He was referring to the lines not getting cleaned out enough if you literally don't use it all the time. I currently have a water tank unit that is my go-to oven. I probably use it four times a week. We;re building a new kitchen in a new house, and I figured a plumbed unit was a step up from what we currently have. Anyone have any copper-tasting food experiences out there?
