Black walnut counters...Waterlox satin or oil finish?

The plan so far: BM white dove perimeter cabinets with PA soapstone (still deciding between white Kohler Whitehaven sink or PA soapstone sink). 4'x9' Island will be F&B Hague Blue with a black walnut top (still deciding on undermount Kohler cast iron or soapsone sink). Plenty of windows & patio doors (with low E glass) for natural light. ADKO powder dewdrop backsplash is in the lead so far. The big question - Waterlox satin or oil finish? I cook all the time, but I am also meticulous with cleanup. Which finish would be more workhorse friendly? Also, any thoughts on a distressed vs. pristine walnut top to start? I don't want something that looks too rustic in this colonial home. Thanks!
