Comments (18)Some more suggestions: Serve it cold with potato salad. Dice it and use in omelets, or make a ham quiche. Make a super ham sandwich: good, fresh bread smeared with mayonnaise and topped with thin slices of ham, slices of good cheese, slices of tomato, bits of crispy bacon and butter-sautéed mushrooms warm from the pan. Serve it warm with sugar-glazed potatoes, redcurrant jelly, Brussels sprouts and a salad. Make the salad from finely sliced white cabbage, grated carrots and quartered grapes, sprinkle a little brown sugar over it and drizzle some lemon juice over that, toss and let stand for about 10 minutes before serving. Comments (15)Copious amounts of booze to make them forget food! Throw a few tri-tips on the barbie then slice it thin. It's like serving steaks without the need for 20 steak knives and a seat at a table. Another thing that works pretty well is to go to Wing Stop and get one of their bulk hot wing platters. All this helps to avoid the sit down all at one time for eating and people will forage over the dinner period. Makes for smaller plates filled with a course at a time and everyone seems to find a spot to sit. Believe me you don't want to spend the time placing tables for twenty people to sit. Over the years we've had many of pool parties and it helps to have folks bring a side or dessert. You know the whole thing about "what can I bring." We've found that people actually feel more comfortable when they bring something. I know this seems strange but they also seem to help with the layout and cleanup when they're making sure you try their green beans with funions and pickled kippers casserole all the while keeping tabs on their prize tupperware. Fish breath is a small price to pay for the help and a single cocktail will make it as if it never existed. I know we don't subscribe to the Martha Stuart book of party planning but if you don't want to spend a whole lot of time cleaning up and prepping so you can focus on the fun take em up on the "what can I bring." Comments (24)I seldom follow a recipe for meatloaf. A lot depends on what I have around. I prefer to mix ground beef with pork sausage, usually I have some Hot Jimmy Dean's around. (It's not really hot, just a nice flavor and spices up the hamburger a bit). Sometimes I'll add some bacon or pepperoni slices to it. Onion, dried or fresh or onion soup mix, whatever I have, often I like teriyaki sauce, usually some Louisiana Hot sauce, maybe some Worsteshire or soy. Much depends on the flavor I'm going for. Oh, and an egg or two and I prefer to use torn or cubed bread soaked in some milk and the sauces rather than crumbs. BBQ sauce if I want more of a BBQ flavor. Lately I've really enjoyed more of a "pizza" or Italian flavor to my meatloaf. So I use Italian seasoning, lemon pepper, fresh ground black pepper, some garlic and whatever else strikes my fancy. Mix in a little pizza sauce is fine too but not necessary. I also occasionally will cube up some mozzarella cheese and poke in there for a secret treat. I don't like sweet toppings and don't like it flooded with ketchup like the culinary terrorists do. Scrape that off and put some gravy on there for crying out loud! I kind of like a bit of a crust on there like my mothers would get but seldom if ever get it. Guess the roaster is just too inclined to keep it moist. I like to use about 80-85% beef so there's some fat in there. Then I take a small rack, cover it with foil, poke holes in the foil for grease to drain through and put the meatloaf of top of it. I have a meatloaf pan or two that works OK but I like the exposure all around better. I often bake potatoes along with it but Dottie I really like your idea of everything right in the pan. Apparently it doesn't have an issue of too much grease this way? Or are you just using lean enough meat that it doesn't produce that much? Comments (15)My husband's uncle used to carve the bird at the table and did a masterful job. She was a home ec professor and the food was wonderful. And he attacked that beautiful bird with great skill and aplomb. He picked the furthest from him, looked you in the eye and said "dark or white" and proceeded to slice a neat slice or 2 from the proper spot. Then he cut a hole in the turkey behind the ribs and in front of the thigh and proceeded to spoon out a spoonful of stuffing, adn your plate went back to you and the next plate was passed while you filled your plate with wild rice and mushrooms, and greenbeans with pearl onions squash souffle etc etc!
