to answer your question, perhaps a cement board substate could be screwed to the steel treads.

Tile will crack. Those stairs, as they are now, will flex--just a bit--but sooner or later the tile will crack. You need a material that can flex--wood.

We wanted to break the wood flooring with the tile in the Pic.. And use the stairs as the feature... If this is not possible we will then do the stairs in the wood laminate as well... Just feel like it's too much wood everywhere...

burnish them and leave them steel color and seal. Or - paint - have a fave color?

Appears you have a tile contractor on site who will be your best resource. Likely would need some kind of panel to separate the expansion/contraction of steel vs tile which requires adding thickness. Make sure the current stair set up passes code for handrails, gaps, etc. if you're in the US.
