Comments (29)We've had our 30" RNB for two years. The oven gets used a lot, as often as 4 times a week when my wife is baking all of our bread. During those two years we had periodic troubles with the door sticking, so I greased the hinges frequently. Finally the door stuck so hard that getting it open damaged the inner panel. Unfortunately, it was essential that it be opened, because it had our Thanksgiving food in it. That sounds grim, but Michael at Bluestar service responded promptly to my email, ordered a new door (reportedly with design fixes), kept me informed as to when to expect it to arrive, and, most importantly, came through exactly as promised. The new door was very easy to install and it works great. I can't say I was thrilled about the hinge problem, but I was very satisfied with the way that Bluestar remedied it. Comments (5)One thing you didn't say was whether your BS is gas or electric. They do make electric wall ovens. I am going to assume you have the gas range oven as it is more common. Not everything needs convection or should use convection. If you are baking, use the convection. Roasting, don't use convection. Gas ovens without convection produce superior results when roasting. If you are baking and need even heat throughout for cooking and browning, reduce the temperature by 25 degrees. If the recipe calls for cookies at 375, cook them on convection at 350. The times should be similar or a little less. You will have to test for doneness. It's a more manual method of baking. Now days, many electric ovens will do the temperature conversion calculation for you when you select convection mode. People have forgotten that they need to do this. With the BS gas, you will have to go old school and do the conversion in your head. One thing that you need to be aware of is the need for extra pre-heat time. It's really important that the oven be at full temperature. This takes time and it's a big oven to heat. So, give yourself a lot of time for pre-heat. That may be one of your difficulties, an oven that isn't at full heat. I would also get an oven thermometer and keep it in the oven. I never trust my ovens. Comments (3)Hi Chris, First, I would not recommend you attempt to permanently affix the probe through the back-guard where the range vents from. You are only asking for bigger problems if you were to try that. I am curious, what is your reason for wanting to do this? If your oven is WAY off from the temperature you set it for on the control knob, you may just need to calibrate the thermostat oven knob. This is a relatively easy adjustment and will give you a more permanent fix than having an ugly wire hanging out the oven door. To be completely honest, external temperature probes to be a bit of a waste. I see many people use them and it makes them think something is wrong with their oven. The difference in temperature throughout the entire oven cavity makes these probes wildly unreliable. Lastly, you should be aware that the temperature you set the oven for and the actual temperature in the oven will never match up. Most people assume if they set the oven for 400 degrees, the oven is 400 degrees. In fact, the standard temp. range when setting an oven for 400 degrees is between 380 - 420 degrees. The idea is that it 'averages' to 400 - and this is true of all ovens throughout all time. Once the oven hits 400, the thermostat in the oven turns off the gas flame, but there is still residual heating which makes it creep up 15-20 degrees. As the oven falls below the 400 mark, the thermostat turns the gas flame back on; but it takes a little while for the flames to bring the temp back on which is why it can get to 380 before it rises again.
