Preheating Wolf Griddle

Can anyone who owns a Wolf rangetop with a griddle tell me how long it takes to heat up enough to make pancakes? I know the Wolf website says 15 min for full heating potential, but I’m wondering how long to preheat to cook something on a lower heat level.

Also, I’m debating between the 12” and 24” griddle for a family of 4... anyone have any advice? Is 12” too small, or is 24” overkill for my family size?

My Wolf griddle is the 12”, but I wanted the charbroiler as well and that was another 12”. Mine is all gas, actually it’s propane. At 375 degrees it’s about 12 minutes. The griddle has a light on it and it will go out when it reaches the set temperature. If I’m grilling steaks on the charbroiler and cooking onions and mushrooms on the griddle I give them both a 15 minute warm up. On my griddle I can get 3 good size pancakes on the griddle at one time. For some reason I have found the front of the griddle hotter than the back, but my Wolf is going on 18 years old. Remember Wolf’s griddle is cast iron so it needs to be seasoned, it will turn dark over time. The first time I made pancakes it wasn’t seasoned I thought I was going to have to chisel those puppies off. Have found over the years that olive oil makes a terrible mess on it (gooey and sticky) i generally use vegetable oil. Best of luck to you, I hope you enjoy your Wolf. My husband is no cook by any stretch but he enjoys this stove. I think he likes to see how high he can the flame in the grill.

Please note that griddles are like ovens, and they haven't quite reached their steady-state temperature the first time the thermostat turns off the heat. It usually needs to go through a few more cycles to have a solidly stable temperature.

This doesn't necessarily matter for all foods, and honestly pancakes are really not that complicated, so I wouldn't be worried by that. But it is the reason why people sometimes decide to preheat their ovens for 45min when making tricky foods (i.e. usually when baking very light dishes).

loves, I open the oven door and let it cool that way. If I were to leave the oven door closed, indeed the fan runs a while but not 1 1/2 hrs ! Yikes! I had read somewhere on the forum that you might injure the electronics by leaving the oven door open as it cools since I guess they were saying the hot air rising over the front controls would/could damage the innards. Well it doesn't say anything in the book about this and I have been doing it over a year. My ovens preheat really fast. I never start the preheat for say my bread , which I make at least 1x a week, until I have the loaves risen to double. My DH does preheat the baking stone for 30 min and also the Le Creuset pot when he makes Sullivan Bread. Other than that I have not done anything special about preheating or baking. The Miele have a lot of special modes so if you are using the probe you do put the meat in the oven as it is preheating and you follow the screen for the probe plug in etc. I have never had a failure in the ovens. If I bake, roast, rotisserie, cakes, cookies, bread ,quiche turkey etc everything has been prefect. I use the ovens a lot and am very happy with them. I have not baked 6 pans of cookies using both ovens, as we just don't eat cookies since there are no little ones anymore. I keep thinking though that I will try it to see if indeed the convection will brown/cook them all as it says it will. If I do I will be sure to post and let everyone know. caroline

Ours does that, too. Apparently it is common (and normal?) with gas, as natural gas does contain some am't of moisture/water, and can pick up more if there is a lot of ground water (at least this is what I've been told). I just wipe it off when it happens.

I have a 30" wall oven (Miele). I regularly preheat for 30 minutes. Years ago, before I bought the oven, I was told to expect that. The dinger goes off before 30 minutes. But the oven will not be fully and evenly heated before that. With one of those bigger range ovens I would expect 30 minutes minimum no matter what anyone says. One thing about the Miele that is not well known and that mutes the entire preheat argument. Their auto roast setting starts in a cold oven and requires no preheating. But the food is done in the same amount of time because the top and bottom elements are used and the oven algorithm compensates. I use this setting so often I would buy the oven again just to have it.

We opted for the 24 inch Wolf dual fuel griddle. So far so good. Doesn’t really hit the peak temperature of 450, but I’m ok with that. For context on why we went with the 24 inch over the 24; family of 6 and also do a lot of at home entertaining. Second, love the real estate and flexibility the larger surface area gives. And last, while we considered the charbroiler/griddle option, our Green Egg does a much better job getting to the temps we like to cook our steaks.
