HELP! need Quirky Kitchen layout ideas

We just moved into an existing (old) 1993 townhome. We are re-doing all of the main level

We're starting in the kitchen with new appliances, painting cabinets white and new countertop. The kitchen is a super quirky awkward set up. We already removed a huge bank of cabinets between the kitchen and dining area, but we are unsure what to do about the layout. We can't afford to move any plumbing or appliances (a remodel quote came in at $40-50K) Anyway, my question is: What do we do with the 'window wall' ? ? Should we put a countertop across to join the 2 sides (as shown with the old shelf laid on top of side counters), if so, what do we do under the countertop? Should we do a moveable cabinet/island we could pull out when needed? My hubby is very handy, but we don't want to put a lot of money into a fix - but it's such and awkward space. The kitchen is set up like a really wide galley kitchen HELP please!! We are ordering quartz soon....Thanks!

FYI...the wood piece across the wall is just a shelf we laid there to see what a countertop would look like...
