Wonder who will start us off with the basket stealing on Mon morning? Look for a new thread posting the baskets in one post on Mon too. So what's ya'lls big plans for Mother's Day? My day will be kitchen duty free. Hoping to spend time in the gardens also. Anyone else a Home Depot Garden Member? They emailed me a buy 1 get 1 free rose bush coupon. Comments (8)You can change this one up by using, minced ham or canned crab, or salmon. I often make three different types so everyone has a choice. Stuffed Baguettes 1 Baguette or French stick 2 cups spinach leaves choped and packed 4 oz cream cheese room temp 1/4 cup fresh dill chopped 1 TBSP milk 4 cups minced ham 1/3 cup toasted pistachions chopped (optional) 1 TBSP dijon mustard 1/3 cup mayonnaise Slice the baguette lengthwise. Hollow out the bread leaving the shell about 1/2 inch thick. Rinse spinach and shake off excess moisture cook in just a bit of water until the leaves are wilted. Drain and squeeze dry and chopp in the food processor ( I just use frozen and ensure it is well drained). Combine cream cheese , dill , milk, and spinach until spreadable. Combine ham, nuts, mustard and enough mayo to make a moist filling. Spread cream cheese all over the inside of the shells. Spoon the ham mixture into the bottom shell, mounding slightly. Place top of loaf back over the filling. Wrap tightly in plastic wrap. Refrigerate for at least 2 hours and as long as 8. Serve cut in slices. Here is another Muffuletta recipe. Excellent and can be made the day before. SOunds harder than it is. Real N'awlins Muffuletta (Weed) 1 Cup pimento-stuffed green olives crushed 1/2 Cup drained kalamata olives crushed 2 Clove garlic minced 1/4 Cup roughly chopped pickled cauliflower 2 Tbl drained capers 1 Tbl chopped celery 1 Tbl chopped carrot 1/2 Cup pepperoncini drained 1/4 Cup marinated cocktail onions 1/2 Tsp celery seed 1 Tsp dried oregano 1 Tsp dried basil 3/4 Tsp ground black pepper 1/4 Cup red wine vinegar 1/2 Cup olive oil 1/4 Cup canola oil 2 (1 pound) loaves Italian bread 8 ounces thinly sliced Genoa salami 8 ounces thinly sliced cooked ham 8 ounces sliced mortadella orcappicola 8 ounces sliced mozzarella cheese 8 ounces sliced provolone cheese Directions 1. To Make Olive Salad: In a medium bowl, combine the~ green olives, kalamata olives, garlic, cauliflower, capers, Jcelery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight. 2. To Make Sandwiches: Cut loaves of bread in half~ horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella, mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters. 3 Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread....See Morelooking for: best dessert for church picnic -- no nuts!
Comments (13)Kids might like the cupcakes more but here's the lemon bar recipe I always use: LEMON BARS DELUXE 2 1/4 cup flour 1/2 cup confectioners' sugar, plus additional for sprinkling 2 sticks butter 4 beaten eggs 2 cups granulated sugar 1/3 cup fresh lemon juice 1/2 tsp baking powder Preheat oven to 350°. Whisk together 2 cups of the flour & the confectioners' sugar. Cut in the butter until the mixture clings together. Press the dough into a 13x9x2" baking dish. Bake 20-25 minutes or until lightly browned. Meanwhile, beat together the eggs, granulated sugar & lemon juice. Mix the remaining 1/4 cup flour with the baking powder; stir into the egg mixture & pour over the hot baked crust. Bake for 25 minutes longer. Remove from the oven & sprinkle w/confectioners' sugar. Cool. Cut into squares.~~From Mountain Measures. KILLER CUPCAKES (makes 20-22) Cupcakes: 4 squares (4 oz) semisweet chocolate 1 tsp vanilla 2 sticks butter 4 eggs 1 1/2 cups sugar 1 cup flour Preheat oven to 350°. Line standard muffin tins w/paper cupcake liners. In the top part of a double boiler over simmering water, melt the chocolate w/the vanilla & butter. In a large bowl, beat the eggs until thick & add the sugar. Beat in the flour. Fold in the butter-chocolate mixture. Spoon into the prepared tins, filling the cups 2/3 full. Filling: 8 oz cream cheese, softened 1/4 cup sugar 1 egg, beaten Dash of salt 3/4 cup semisweet chocolate chips Mix the cream cheese, sugar, egg & salt until just blended. Comments (13)I think it all depends upon where you want to draw the line on form over function. For me, this Brookstone one would be a good compromise. Lighter weight and not scratchy like a basket, but still very attractive looking and vintage-y. OTOH, if I really wanted something that kept things cold, I love the vintage Yeti But, if I'd just always had my heart set on the traditional, I might buy this one since it is not very much money and if it ended up being truly annoying to use, c'est la vie This one gets good reviews and had a built in cooler After all that, if I used it a lot,I would probably say, darn, and just buy a Scout ..... these are the most practical, the most functional, and the lightest weight...See MoreMimou-GW
