Nervous about new install of white rift sawn oak floors

We already signed a contract for a kitchen remodel and installation of white oak, rift sawn, select flooring (3 1/4" wide) for living/dining room, kitchen and stairs. The contractor is sub-contracting the floor guy. I am nervous because the contractor told us the floor guy is excited because he never did white oak floors before (because people have just requested red oak from him). Should I be very worried? Is there a big difference between installing and staining red vs. white oak? I've read about tannin pulls in white oak. Should I tell him he has to pre-condition the wood? If so, with what product? I'm thinking of a medium brown tone stain without orange or red tones. Any suggestions? What for a top-coat/finish that will be durable and long-lasting?, (snow in Chicago and drips in the kitchen). I really don't know much about the process of floor finishing. Please help! I would appreciate your advice.
