What color(s) should we paint the interior of our new home?

Closing on our first home on Monday and have about a month before we officially need to be out of our current place. We plan on repainting all the interior walls and ceilings, but are having a hard time deciding on the color(s). What would you do if this was your place?

Although it's hard to tell from the pictures, the current paint job isn't well done, and the walls aren't especially clean. All the sellers belongings will be gone except the appliances, I just don't have any pictures of it empty. Main floor has living room, kitchen, bathroom, laundry room, and a space in the back that's essentially a second living room. Second floor has 3 bedrooms and a bathroom.

We are not going to paint the wood trim on the main floor.

We will eventually be replacing the flooring and doing other updates, but that's a ways down the road. For now, fresh paint will be the bulk of what we can do, aesthetically, before moving in.

We aren't fans of the dated look it currently has, so we were thinking of doing (flat/matte) white on the ceilings and (satin or eggshell finish) gray on the the walls. Maybe a gray that's light with cool/blue tones? Trying to avoid tan/beige or anything that looks too dingy. We will be very slowly replacing our furniture & whatnot, so we were thinking neutral paint color choices would be a good idea so our stuff doesn't look so mismatched and random.

Questions:

What color(s) would you recommend? Do we paint all the walls the same color? What should we do with the bathrooms? I have no idea what would match with either of the bathrooms tiles. We'd be willing to paint the brown wood accessories in the main floor bathroom. (Cabinet, mirror frame, etc.)

Any other general painting tips or recommendations on the space are much appreciated!
