HanStone Quartz Countertop Seam

Hello, I recently had a HanStone quartz countertop installed by StoneSource and am very unhappy with my seam. The actual cut of the two pieces is very jagged and the gap is wide enough for my fingernail to fit between. I complain, and they come and fill it with a different color 3 times now. I told them I think they need to recut the pieces as they are very jagged and try to get them closer together but I am being told that quartz is always jagged when cut and this is all normal. I shared a photo of my sisters perfect quartz seam from IKEA and was put in my place as this guy has been doing this for so many years and what do I know....

Can someone tell me if I am expecting too much? I guess I should not have bought white quartz!? There is apparently no such thing as a perfect seam on white quartz?

The first photo shows how jagged the same was after the 2nd refill, it's no smoother but still very visible.
