backsplash tile help

we are finishing up our kitchen remodel and it's time to pick a tile for the backsplash. I've never done tile so want to be sure I do this right.

cabinets are Shiloh Maple Sable
countertops are Viscount White granite
flooring is LifeProof Sterling Oak
appliances are stainless steel
hardware is silver bar pulls.
walls in the rest of the kitchen are a light grey (that has a blueish under tone)

I know I want something simple for the tile. Our granite is the show with all the movement. We do have good LED lights and under cabinet lighting already installed. I'm not sure if we should go with a Small subway tile, or a longer one. White, cream, or grey.

The first picture was taken with our lighting dimmed a bit. Second picture is all lighting on fully. Third picture is some antique white handcrafted tiles my husband found at Home Depot, unfortunately those don't have bullnose option though.
