Bad Stain Job on Tongue and Groove Ceiling?

I am in the midst of a full house renovation due to a fire. The house has a TnG wood ceiling which we want to preserve / leave exposed. After soda blasting, our project manager had the whole ceiling sanded down and his painter did this sample stain on a single bay:



We signed off on this stain, which achieved the light, natural look we were going for, with the understanding that there would be some tonal variation. However, much of the living and dining room came out looking like either very yellow and splotchy (like the below shot) or an extremely dark, deep red.



My contractor and his painter are stating that this degree of variation is natural and unavoidable with a light stain and that the only solution to achieve a more consistent color is to move to a much, much darker stain. To my mind, this is not representative of the sample we approved and their solution is not acceptable.


Should I pursue a second opinion on this? Is this a normal degree of variation or acceptable outcome for a staining job like this?
