How many coats of paint/primer should I use?

I will be repainting our master bath from a medium faux beige/Tuscan look to a light beige. I would like it to be eggshell sheen.

I would like to do no more than two coats if possible. I could do two coats paint or one coat primer (tinted close to the color I want?) and a coat of paint. Or should I do a coat of primer and two coats of paint? It's a large 1980's bathroom (remodeled in 2005) so that is why I'm trying to get out of doing the third coat.

Here are the two colors. The white strip to the right on the paint chip will give you a better idea to the tones I am working with. The photo looks like it is a textured wall but it is smooth.
