Ok, so I've been working on it a little bit more. I decided for a drawer to put the beer case, because it's just easier to take stuff out. Also, I found some wire baskets to use in the space under the counters - they are here. Had to make the counter space a little smaller (35.4 inches total, 17.7 per side) because the maximum width of the drawers is 17.7. That made the corner space a little bigger and more accessible. I also put a few shelves above the counter and made shallow - (5.9 inches) - I figured I could use them for spice and other small things. At this point I'm quite pleased. If you see anything you would change, please say so, I might be missing a few things and a different perspective is always welcome. Fingers crossed all shelves can be made adjustable :D

not sure what is under the tape, but if it's just open floor, the pantry is still part of the kitchen before you get to the French doors in the LR>. The back wall of the pantry will provide a nice place for a table/chest as you have shown.

My pantry is 58"x14' long with the door on the short end. I debated for a long time on shelves/cabinets and finally decided to go with 3 Ikea HAVSTA Storage units along the long wall and 24" butcher block countertop along the back short wall with a mini-wine cooler & a single HAVSTA base cabinet underneath (pulled forward to make up for the 6" depth difference). The base cabinet is 18" deep and the top shelves are around 12". They work great. The base cabinets are a nice depth for things like bulk paper towel storage and Sam's Club size snacks for kid's lunches. The upper shelves are a nice depth for can foods where nothing gets lost in the back. Unlike a lot of the ikea shelving units, these are made from pine so there are no issues with sagging shelves. (Some Pinterest photos I've seen of Ikea PAX used as pantry shelving were sagging.) I'll try to attach a link to a similar setup on the Ikea website. (As with most Ikea products, there are a bazillion configurations!) My middle upper cabinet has doors, but after I bought them, I decided it would be more efficient without them. The upper units with doors have a back panel, so you can't access electrical outlets without cutting holes in it. The upper units without doors do not have backs, so I can access my electrical outlets. I got a matching paint color and painted the wall behind the units so it looks pretty and I don't think anyone has noticed two are painted and the 3rd has the back board.

The advice on the Pantry has been good. It may help you to get fresh sets of eyes on the rest of your plan though. You may have caught hints by commenters, like the bumpout, it's size, the windows, a prep sink, that an entire plan review may help the Pantry along with the rest of the house. From this snippet of the plan I see a very complicated structure with many girder trusses. There is a fake dormer, presumably lined up over this Pantry bumpout. There are parallel gable roofs in the Master and Covered Deck. There are scissor trusses over a flat ceiling of the Mudroom. There is a tub in the bath that doesn't seem to have a Guest Room nearby. There is a convergence of vaulted to flat ceilings and where those hit on walls that is odd. A possible hood exhaust pipe in a vault is slightly off-center, and the discharge route is questionable. Just some things I noticed that might be fine or may not be optimal.
