Chill hour requirements for fruit trees?

Hello All
I just love to spend those cold windy nights inside reading through old gardening posts while I mark my calendar for planting and seed starting dates :)
Now to my questions: me and my bf will be starting an orchard out in NE Oklahoma (outside Stroud) this year and while researching varieties I remember I stumbled across a post from Dawn which listed the chill hour requirements for a variety of peaches, plums, nectarines and other fruit trees. I cannot find it anymore...
So my questions is: which varieties have you grown successfully with minimal damage from late freezes? Some nursery sites will sometimes specify the chill requirements but not always.
We are wanting to plant 2 plums, 1 peach, 1 apricot, 1 nectarine, 1 sweet cherry and 2 apples (no cedars within at least a mile) for starters.
