BlueStar Platinum vs. Capital Connoisseurian
Comments (12)I have recently seen the Bluestar Platinum, the American Range performer and the Capital Culinarian and Connoissarian demoed live. I am looking at 48inch ranges with grill. Bluestar - unexpectly liked the interchangeable grill and griddle. They are solid and provide great flexibility. The claim for the new oven with the rear burner is better circulation and heating speed. I would like to know if the claim pans out. BUT, the oven door on this oven only gets a little warm, not hot. Unfortunately the second oven is the old design with no convection or broil and a hot door. Why oh why? I live an hour from Reading so I don't know if that improves service or not. American - THe only one with fully functioning (broil and convection) small AND large ovens. For Capital and Bluestar, the small oven has no convection and no broiler. For meals for one or two, the small oven is real handy. Burner flame appeared to go straight up, not out. I tried heating small amount of water in large pan and the heat seemed well distributed. One result, smaller pans handled higher flame without the flames climbing the sides. I made an appt with distributor 2 weeks ahead and got stood up so I did all demoing on my own. Had broiler and oven problems but that could be bad hookup (dumb at the distributor). Capital - Not sure how well the ovens work in terms of even baking. Also, broiler is behind glass. I don't know how this affects cooking. Has rotisserie (don't know if i'll use it) and self clean. I think Connoisarrian has convection in the second oven. Mixed reviews of grill and build quality. Accomodated various pot sizes by turning down the flame. THe quantity of complaints about Capital's service attitude concerns me. I like the burners. I can't tell if burners of varying intensities or all burners the same is better. Is there a difference between a 23000 btu burner turned down and a lower btu burner? (I'm not talking simmer here, just regular cooking.) Comments (45)Hi All- Well it has been two years since since we received our BS Platinum (and started this thread) and I would have to say we have a love / hate relationship with it. To summarize... What we like: - The burners work great, love the open burners (although the extra Platinum BTU has no value for us) - The stove looks terrific - The integrated wok feature works well, I love this What we don't like: - The grill/griddle is a useless gimmick in my view (sorry to be so direct), why? Because the heat is inconsistent and the handling / replacement is cumbersome. I see no value in these features better to use an outdoor grill and a $20 Lodge cast iron griddle over the burners which is what this really is - The oven has been a disaster to be honest. We have had 4 service calls, first the retrofit for the defective design which melted an oven rack, then once fixed we have struggled to get the oven to maintain a consistent temperature. Too hot or too cold. For the $8k we paid it is totally ridiculous we had better performance with our cheap GE gas range we had before. Bluestar support has been fine but we are out of warranty now and it seems we may be stuck with owning an overpriced lemon. My wife is a professional chef and the lack of temperature control is making her crazy. In conclusion I would say we love the look and burners and really want this to be our special centerpiece appliance but feel that the oven is mediocre and that we overpaid. If we could do it again we would probably buy an RNB or a dual fuel Wolf for better oven temperature control. Come on Bluestar you can do better than this!...See MoreBluestar Platinum range review
Comments (59)Also do not recommend a Blue Star. Had a Lacanche for 11 years and loved it. Moved to a new home with a 36" blue star and it is really terrible. The burners flame out, the oven is 36" wide but not that tall making it a pain to put dutch ovens in it and out, takes FOREVER to heat up, roast veg just don't turn out that well (typically undercooked), it's hard to get a low simmer. Yes, the burners are powerful but they have no meaningful range and the power isn't necessary. My Lacanche made great stir fry. Also have to rotate food more in oven to prevent burning. Some of these problems may be oven size and not blue star specific but I've cooked on other 36" ovens in rentals long ago and didn't have as much trouble with the oven. It seems to be made with solid materials but the putting together of those isn't that well done. I'm glad I got a Lacanche all those years ago when we remodeled out first kitchen. Most people that make comments either don't have a platinum range or post after using it just a couple of time and don't really know how to use the interchangeable Grill / Griddle. When people get new cooking appliances they nearly always have to adapt the the new appliance. Some do while other try it three times doing the same thing fail and write a bad comment or simply stop using it. Example.......... If we get a new oven in the cooking school we get 10 cook sheets of cookies and cook them on different setting using different times or temps to see which works best. Just because you your old oven cooked stunning cookies in 13 mins using convection does not mean your new one will do the same, in Capitals case maybe you need to use less temp on the "delicate bake" setting to get stunning cookies. I once had a lady fly into Boston to cook on the Capital she brought her own cookie dough and burnt 3 sets of cookies, then told me the oven in the range does not cook at all well. I asked her what she did and she told me she tried it 3 times doing the same temp and time as her old range at home. I explained to her ( in a polite way) " thats a clear definition of insanity "as per the old saying. She agreed and we set to to make more cookie dough, within 1 hour later we had really good cookies. As you can see from the link below i have used the grill with good results, in fact I might even say excellent results.
