Backsplash ideas? Herringbone white ceramic long tile or 3"x6"

I have to decide on the kitchen backsplash. I have quartzite countertops and do not want anything too bold that competes with the stone, but I do want to brighten up the space a bit. I am thinking of ceramic rectangular subway tile. I have the 3x6 beveled white subway tile in brick patter at the upstairs bathrooms, so I was thinking of doing subway tile in a different way.

There is a wall next to the sink where I want to add open wood shelves and I thought it would look nice to do the backsplash up to the top of the wall.

Will a herringbone pattern with light gray grout work in this space as backsplash?

Will it look ok to use 3"x12" white subway on herringbone or is it too big for this pattern (I can't find a smaller size other than 3"x6") or should I stick to the 3"x6"?

I have attached pictures of the wall where plan to do the shelves as well as the kitchen for reference. I also attached pictures of ideas and the tile I am looking at.
