Need flooring advice. Laminate, engineered, or LVP?

My husband and I will be renovating an apartment in a high rise that currently has parquet in the living/dining/bedroom area and tile in the kitchen. We would like cohesive flooring to make the space appear larger.

It's just the two of us without any pets. We are both very neat, generally don't wear shoes in our home. We are not worried about spills/stains and are considering lighter colors (love the look of light french oak) so scratches shouldn't be as huge of a concern.

The rooms all face west with floor to ceiling windows. We do plan on having them changed out in the next year to newer windows with low-e/uv protection and also getting solar shades that we will keep lowered when the sun is shining though to protect our furniture...and flooring.

We have looked at wonderful options in Laminate, Engineered, and LVP but have read about issues with each. Ideally, we'd like to install right over the existing flooring but aren't apposed to removing it and starting fresh over the concrete. We'd like to keep the cost at under $6/sf for material. Which should we consider? Any specific brands we should look at?
