This recipe is from Joy of Cooking. Been using it for years! 1 lb. cranberries, picked over 2 cups sugar 1/2 cup water 1/2 cup orange juice (now I sub tangerine juice) 2 teaspoons grated orange zest. Cook, uncovered, over medium heat until most of the cranberries pop open and the mixture is somewhat thickened, 7-10 minutes. If desired, add: 1/2 cup blanched almonds, slivered (I don't) Let cool and serve or refrigerate for up to 1 day.

I've made this one a few times, and though I like the full fat version with chocolate chips better, this is not a bad healthy alternative! Banana Bread Lite 2 cups flour ½ cup whole wheat flour ¼ cupd ground flax seed 1 cup brown sugar (or brown sugar splenda) 1 tsp baking soda 1 tsp baking powder 1 tsp cinnamon ½ tsp salt 3 egg whites 2 tbsp butter 1 cup plain yogurt (lo fat preferred) 1 tsp vailla ½ cup walnuts Mash bananas and mix in all other wet ingredients. Mix dry ingredients and add to wet ingredients. Add chopped nuts. Put in PAM sprayed 9 x 5 loaf pan. Bake at 325 for 1 hr 20 min.

Cranberry Jezebel (adapted from Cooking Light and LindaC on the Cooking Forum) Cranberry Jezebel 12 oz bag fresh or frozen cranberries 1 c. fresh squeezed orange juice 1/2 c. white sugar 1/2 c brown sugar 2 Tablespoons horseradish 1 Tablespoon Dijon mustard Wash and pick over the berries. Put water and sugars in saucepan (large enough to prevent boil over) and bring to a boil, add berries and return to a boil, cook on medium for 10 minutes from the time it returns to a boil, stirring occasionally. Cool to lukewarm then stir in horseradish and Dijon mustard. Refrigerate for at least a few hours or better yet overnight.

Just finished up mine. Very traditional - cranberries, grated orange peel, orange juice (and the chopped up remains of the grated orange) sugar, cinnamon and a bit of grated ginger. No booze in this one - too many kids at the dinner. It smelled so good cooking and tastes even better. btw, I made spiced poached D'anjou pears for dessert for family Sunday dinner this weekend. They were a huge hit ;-)
