Satsuma Mandarin Marmalade

Our two Satsuma trees have been producing some nice, juicy, small, ripe mandarins that we have been eating fresh over the last few weeks. This is the first year the Brown Select tree has produced fruit. I noticed the fruit do not hang well on the tree after they are ripe and will turn soft and fall off of the tree. Most of the fruit turned ripe all at once so I clipped most of them (I tried to twist a few off and the peel/stemstuck to the twig! I'm bad.) and put in the refrigerator and used half to make marmalade. I love homemade marmalade and this way I can crack open a jar and the mandarin scent and flavor will last us through at least part of the winter.. Until next year..
