How do you store peppers in vinegar?
Comments (7)Not if you will go to the correct forum to ask the questions. It has been linked for you above. There are certified food preservationist on the Harvest forum, people trained in the safety issues encountered when one is working with a low-acid food like peppers. As I said above, canning is not required. But if you do not can them or freeze them or ferment them then they must be kept in the fridge stored in vinegar. The guidelines stipulate a minimum of 5% acidic vinegar. Those are your choices - canning, freezing, fermenting, or vinegar brine in the fridge. The blanching, blistering and/or peeling indicated in the guidelines is done for 2 reasons: 1) to increase their storage life in the fridge by killing surface bacteria and destroying the enzymes that hasten rotting and 2) to insure penetration of the pepper by the vinegar. Peppers done that way have a fridge shelf life of approx. 3-4 months. If you choose to skip that part you need to at least cut a slit in the pepper so the vinegar can get inside. The fridge life of those peppers is approx. 3 weeks to 1 month. After that time listeria can begin to grow in them. Again, all of this is discussed in far greater detail over on the food preservation forum and in even more detail at NCHFP also linked above. Comments (13)Future kitchen will have 18" stacked uppers on top of 36" cabs. I do not have a lot of space but I can go up. In the new kitchen an already in place small hall closet/pantry next to kitchen will be put to better use. A lot of the items from pantry closet and little used items clogging my space will be moved up to the 18" stacked, such as, Hurricane cooking supplies like portable propane burners & more, also, extra vases, patio serving stuff, party glassware, little used sm electric fryer and many other used but little used items that I need. My above frig cab in new kitchen will be deeper and things that are little used, but more often used than the stuff in the 18" cabs will go there as well as the above range cab. Most often used items will all be housed in conveniently reachable cabs, drawers or susan. Spices will be in two six" pulloutsÂcant wait for that as the only place for them now is in the susan which I at first loved and now hate because it takes forever to find what I want. So, pretty much IÂm working my way down in an order of use except the pull-out spice cabs will go on the 36" wall run do to my back not liking to bend and not enough room for extra drawer base....See MoreIdeas for wall near window and stove without upper cabinets
Comments (7)I'm not a fan of the 3" matching granite strip as a backsplash. It's been discussed here before, and many think it's dated. In looking at your photos and plans, I can see why you'd do that. Do you have enough storage that you can go without the uppers? Even if you'd need to get a step stool, you might consider putting them in for items you don't need to reach often. Without cabs, were you planning some art work or the like in those spots? Maybe frame one of those cool wall drawings to hang there? ;)...See MoreFew upper cabs- where do you store your glasses?
Comments (14)Bdaykitchen, because doing without uppers meant a lack of concentrated storage in any particular counter area, I decided to do point-of-use storage for the dishes and split them off to different areas (fanned out from DW but mostly pretty close). Cups and cereal bowls over by the coffeemaker and refrigerator/pantry wall, water glasses close to the prep sink because no good space for them by the main one. Our island has 12" deep cabinets on its traffic side and the pantry wall is 12" deep, BTW, and those shallow shelves lend themselves nicely to dish and glass storage, although our everyday plates and hot-stuff bowls go in a drawer by the stove and table--the only ones I actually have to walk across the kitchen to put away. Hope there's an idea in there somewhere for your situation. I do love not having uppers....See Moreannvw
