Advice needed! How to address transition from tile to drywall.

One wall of our guest shower ends on a drywalled wall. We had planned to use a bullnose tile to finish the tile. To make the shower wall level, the tile guy used a lot of thinset on top of the denshield. So now, once they install the bullnose, there will be a large gap between the back of the tile and the drywall. The contractor suggested furrowing out the bathroom wall about 18 inches once the tile is finished so there won't be a large gap or putting grout on the edge of the thinset and painting the grout to match the wall. The last option sounds horrible to me and the first option sounds iffy. Advice? I asked why the wall wasn't made straight when the Denshield was installed and was told it wasn't possible because the walls are so bad.

I am just holding the bullnose piece up in these last two photos -- they aren't actually installed yet.
