[Advice needed] Where to stop backsplash in vaulted ceiling kitchen?

I am looking for suggestions on where to stop the backsplash in our new kitchen. I have included round 1 2020 elevations below.

A few things to note and where the struggle is:

The room with the kitchen is having a vault exposed. The peak of the vault will be just to the right of the kitchen widow/sink. An exposed beam will run the peak of the vault. The ceiling height at the peak to the right of the window is 140” and the height above the range is 130”.

Because of the high ceilings, I’m not sure if tile backsplash running to the ceiling is possible (budget and also may appear too overwhelming).

I am also considering deleting the cabinets on either side of the sink to keep the open feel.
