Ants are literally eating my potatoes to death!

Please help me help my potatoes plants! Ants are literally killing them from eating CHUNKS out of the stems.

I have done so much research and everything says only fire ants will eat plants and I could be wrong but they don't look like the usual big red fire ants I've seen. They look like the normal small ones that ruin picnics, also they bite or something .. a lot .. possibly carpenter ants?

Anywhoo, how do I get rid of the little ant holes? ;)

I am gardening as organically as possible.

This is my first vegetable garden.

I use Alaska fish fertilizer.

I've tried

- peppermint essential oil mixed with water (at different strengths)

- seventh generation citrus dish soap and water

- combination of peppermint and dish soap

- diatomaceous earth around and on the plants at the risk of hurting other valuable insects

I've soaked the ground, the plants, spent 2 hours flicking them off the plants but I work full time so unfortunately I can't spend all my time guarding potatoes.

Is there anything else I can try to get rid of these little demons?

Will my potatoes be ruined now?

Should I just pull any potatoes i might have? Two of my plants have flowered

P.S. these are the only plants they bother with

I have Yukon gold and gold rush they seem to like the ones on the left more... I think those are the Yukons
