Transitioning Trim Color

First of all, it is not because I want to have 2 trim colors. We bought an old lake home in which every room was a different color. The largest room was black and our bedroom was chocolate raspberry. We had green, blue, yellow, you name it. We are painting all of the rooms gray except the kitchen. The kitchen was recently remodeled with creamy, off-white cabinets which I do not want to touch. The trim in the kitchen and throughout the house was a creamy, off-white. This trim color made all of our newly painted gray walls look blue so I am painting the trim white. It is like magic when they turn gray as soon as the trim is painted white. My problem comes where 3 rooms adjoin the kitchen 2 with 5 inch wide casings and one with a door. What is the best way to transition from white to creamy off-white.
