whitespire birch clump

I've recently moved to a new house and there is a lovely clump of three whitespire birch trees in the front yard. The only problem, it is a bit unsightly because the grass has been allowed to grow up around the trunks. I read that birch tree roots are close to the surface and you should be careful not to damage them. I really want to landscape around the trees and create a beautiful bed with mulch possibly and other plantings. Any advice on how to do this successfully without damaging the trees? companion planting suggestions would be appreciated from those with knowledge as well.
