Dark vs Light Countertop in Small Dim Kitchen --Help!

Our kitchen is small (~11ft x 11ft, 8ft ceiling), in dire need of renovation and has very little natural light due to an sloping enclosed porch roof. We will be adding several recessed lights to help brighten the room and by necessity will have them on most times... We've been working with a KD who has a clever layout to maximise utility and storage space but are now at the point where we need to choose a countertop. KD suggests light/white wood, paint/backsplash and countertop to make use of what little light comes in. The floor however is a dark grey-brown vinyl which was installed new by the previous owners so is still in good shape. White-on-white-on-white isn't practical for us (in the country, mud season, large GSD and black cat...). New cabinets will be either clear-lacquered natural birch or hickory. We've narrowed down the choices to two, both from WilsonArt: Cosmos Granite and Spring Carnival. Can anyone who has either of these installed provide a photo? Even with several samples laid out it's difficult to visualize the entire run and we can't agree on dark vs light. Any other ideas or suggestions would be most welcome!
