Add to that we have one,two or three little ones added to DH and I in our queen sized bed every night so understand about the sleep deprevation. " Drake is teething like crazy and was vax'd Thursday and won't go to anyone else and won't play in his exersaucer or on the floor, he has to have momma. That's why I needed a recipe for a whole chicken in the crockpot, I didn't have the time to take it apart, and didn't want to use the oven. Thanks for the recipes, ya'll. Changeling, it's ok. It wasn't entirely you, and I forgive you anyway. I just don't cook the way I used to. It's exactly like Stacy said, some nights I'm lucky to get a can of anything opened for supper. I simply don't have the time or sanity to prepare an elaborate meal. And the forum has changed since I first started posting here, not saying that's bad, just saying that I haven't been able to keep up with the changes because of the direction I've gone with my life. Comments (13)Here are two of my favorites: Chicken Tetrazzini â¢4 cups cooked diced chicken â¢salt and pepper â¢8 ounces spaghetti, cooked and drained â¢6 tablespoons butter â¢8 ounces sliced mushrooms â¢1/4 cup all-purpose flour â¢1 cup light cream or half-and-half â¢2 cups chicken broth â¢1/4 cup dry sherry â¢1/3 cup grated Parmesan cheese â¢ground sweet paprika, optional Heat the oven to 425ð. Butter a 2 1/2- to 3-quart baking dish. Cook spaghetti or noodles according to package directions. Meanwhile, in skillet, melt 2 tablespoons butter over medium-low heat; sauté sliced mushrooms until golden. In a saucepan, melt 1/4 cup butter; stir in flour, and 1/2 teaspoon salt. Stir until smooth; add chicken broth and cream. Cook, stirring, until sauce is thickened. Add chicken, cooked mushrooms, and sherry; heat through. Place noodles or spaghetti in a buttered baking dish; pour on sauce. Top with Parmesan cheese and sprinkle with paprika. Bake at 425ð for 15 to 20 minutes, until hot and bubbly. serves 8 Baked Ziti 1 pound dry ziti pasta 1 onion, chopped 1 pound lean ground beef 2 (26 ounce) jars spaghetti sauce or homemade sauce 6 ounces provolone cheese, sliced 1 1/2 cups sour cream 6 ounces mozzarella cheese, shredded 2 tablespoons grated Parmesan cheese Directions: 1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. 2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. 3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. 4. Cook all day on low (or #3 in a slow cooker). When meat is done, shred it and put back in its juices. Serve on warm kaiser buns (toast if desired). Top with favorite cheese--cheddar, colby/jack, mozzarella/cheddar, etc. Warm in the microwave if cheese needs to be melted. Can also top with sauteed onions, green peppers, and mushrooms if desired. Comments (13)Here's one I made this week... I didn't use the crock pot however since I had leftover roasted chicken which I used. I just mixed all the ingredients listed (except the noodles) and put in the oven for 30 minutes. Wonderful comfort food! I'll be making this again soon! Slow Cooker Chicken Stroganoff Ingredients 4 skinless, boneless chicken breast halves - cubed 1/8 cup margarine 1 (.7 ounce) package dry Italian-style salad dressing mix 1 (8 ounce) package cream cheese 1 (10.75 ounce) can condensed cream of chicken soup Directions Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours. Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm. Pour over cooked egg noodles.
