I think you should go for them- they are beautiful and unique. I am a firm believer in doing something fun for pulls. When I'm in a kitchen that does fun pulls, it personalizes it a bit more. I'm not sure why your kitchen is considered Victorian (I mean this in the humblest way, I trust it is considered that, but just in my ignorance of current kitchen style wouldn't have categorized in that way) but that style of pull would definitely fit with shaker style. It wouldn't fit with 1930's style which was more stream-lined and art deco. If you wanted to do that, although I know you don't like them, I would do green glass pulls (you can actually do green glass handle pulls too). The link below is to a kitchen that has similar cabinets and counter top and goes 30's. If you were going Victorian, I actually think the style would work with it, while it wouldn't be considered high Victorian, remember Victorian style spanned a long time and includes arts and crafts and eastlake is part of this category. Also remember, if you look historically, the Victorians didn't paint much of anything white- they couldn't get a real white color, it was more brownish because they used Linseed oil as a mixer- so again, go with what you love and don't fret about matching. It's impossible to do accurately. Yeesh sorry for the mini-history shpeil (speil? speel?) but that's one of my favorite parts of decorating. When comparing the specific choices offered, I liked the shaker best. It is also more consistent with what you did upstairs. In general I prefer raised panel, but as I said the shaker here is better IMO.

I had similar cabinets and here are the options I found: 1. Cut out the centers (leaving just a frame around) and insert new panels inside that frame. I didn't opt for this option because my edges were pretty beaten up. 2. You can apply a "edge", like you mentioned, but you won't be able to really cover up the routed edges. You'd have to fill them with auto body filler and then sand - lot of work. 3. Get some poplar wood and plywood and using just a table saw, glue, and clamps you can build completely new shaker style doors. I built 12 doors and it cost me about $150 for the materials. It was totally worth it. The cabinets look like new!!!! If I knew how to, I'd post some pictures. Love the end effect!

The pulls weren't too hard to match. My cabinet pulls were through my cabinet installer, but I found the matching appliance pulls on Top Knobs. You will definitely need specific appliance pulls for these awesome and heavy doors ;) If you're really interested in paneling, maybe you could start your hardware search that way.
